Refrigerator & Freezer Food Safety Tool

Direct Answer: How Long Does Food Last in a Power Outage? Source: USDA FoodSafety.gov Guidelines

An unopened refrigerator keeps perishable food cold and safe for approximately 4 hours. A full freezer maintains safe freezing temperatures for 48 hours (or 24 hours if half full) provided the door remains closed. Any perishable meat, poultry, fish, soft cheese, milk, or cooked leftovers above 40°F (4.4°C) for more than 2 hours (or 1 hour above 90°F) MUST be discarded to prevent severe bacterial food poisoning.

Perishable Food Disposition Guide (After 4 Hours Above 40°F)

Food Item Category Action After 4 Hours > 40°F Reason & USDA Standard
Raw Meat, Poultry, Seafood DISCARD IMMEDIATELY Rapid proliferation of Salmonella, Campylobacter, and Staphylococcus aureus. Cooking does not neutralize heat-stable enterotoxins.
Milk, Cream, Soft Cheeses (Brie, Mozzarella, Ricotta) DISCARD High moisture and neutral pH create an ideal medium for Listeria monocytogenes.
Hard Cheeses (Cheddar, Parmesan, Swiss) SAFE TO KEEP Low moisture and acidic culturing prevent rapid bacterial colonization.
Raw Whole Eggs in Shell DISCARD AFTER 2 HRS > 40°F Salmonella enteritidis risk increases dramatically once shell condensation forms.
Opened Condiments (Ketchup, Mustard, Pickles) SAFE TO KEEP High vinegar (acetic acid) or sugar concentration inhibits bacterial growth. (Note: Discard opened mayonnaise after 8 hours above 50°F).
